Simple Cinnamon Buttercream - Pani Reka Pata Hinamona

Kia ora e te iwi (hey there everyone). This Simple Cinnamon Buttercream compliments so many different baked recipes. The best thing about it is that it only takes a few minutes to whip up. Begin the process by whipping pata kūteretere (softened butter) with puehu huka (icing sugar), hinamona (cinnamon) and wanira (vanilla). Before you start, ensure that the pata (butter) is soft enough but not melted. You will know if it the right consistency when the colour changes to pale and the texture is fluffy. After 5 minutes, it is ready to use however you want. I particularly love this buttercream with my Gluten and Dairy free Whole Orange Almond Cake.

Can I use this Simple Cinnamon Buttercream for any cake?

Āe mārika - yes indeed! This buttercream would go so well on my Carrot Cake Loaf. It would also taste delicious on my Banana Cupcakes or Ultimate Peanut Butter Cookies. Hinamona (cinnamon) has a beautiful way of enriching flavours. So, don't be shy to experiment with how you use this recipe.

Can I use this icing for a layered cake?

Āe rā - yes! The quantity below covers one single cake. The images below are from my Gluten free orange cake and it uses a 19cm or 20cm cake tin. As you can see, I use the icing to cover the cake in a thick layer before adding rahipere (raspberries). If you want to do a layered cake and add some piping on top, simply double or triple the quantity. To do this, go to the recipe and find the section that is titled 'Servings: 1 Cup". Press the number one and use the scale to increase the quantity to 2, 3 or more cups of buttercream.

Can I swap cinnamon for different spices?

Karawhuia - go for it! You can use the same amount of rau kikini whakauruuru (mixed spice) or half the amount of tinitia (ginger). The flavour profile is really up to you so play with it however you want.

Ingredients

Cinnamon Buttercream - Pani Reka Hinamona

  • 100 g pata kūteretere (softened butter) If you want to make this dairy free, simply swap the butter for 100g olivini (dairy free spread).
  • ⅓ C (55 g) puehu huka (icing sugar)
  • 1 teaspoon hinamona (cinnamon)
  • 1 teaspoon wanira (vanilla)

Instructions

Cinnamon Buttercream - Pani Reka Hinamona

  • Add all of the ingredients in to a medium bowl. Whip on high for five minutes until the butter is light and fluffy.
  • Spread all over the Keke ārani wīti-kore (gluten free orange cake). This would also work well for a spice cake like my carrot cake (recipe in my cookbook).
