Parmesan Wafer Crisps are made with one ingredient but create a dramatic flair to any savoury dish. A fine grater and a frying pan is all you need to make them. Add them on top of Savoury Muffins or sprinkle them over your favourite soup for the crunch factor.

Parmesan Wafer Crisps are the easiest but most effective whakarākei mōkararkara (savoury decorations). I am a complete sucker for beautiful decorations and especially wafers, shards or rustic shapes. The best part, these only take five minutes to make and they always impress.
How to serve the Parmesan wafer Crisps:
Serve the beauties on top of my Cheesy Bacon Savoury Muffins, perched on a simple herbed cream. They also add a delicious crunch to soups or salads. And if cheese is calling your name, take a squizz at this Creamy Pumpkin Tart or Brie Bread Wreath.

Ingredient Tips for the Parmesan Wafer Crisps:

- Parmesan Cheese: One ingredient is all you need for these epic whakarākei (decoration). Use a solid block of parmesan and a super fine grater so the cheese remains wafer thin.
Expert Tips:
Use less tīhi (cheese) than you think when doing this simple recipe so start by making a tester to gauge the correct amount to use.
Once the tīhi (cheese) is cooked and it has been removed from the heat, flavour the wafer by sprinkling over chill flakes, garlic salt or pepper.
Step by Step Instructions for Parmesan Wafer Crisps:

1. Heat up the Frying Pan:
Set a frying pan over medium heat.
2. Add the Parmesan Cheese:
Once it is heated, finely grate over the parmesan cheese in an even layer.
Cook for two or three minutes until it is deeply golden.

3. Flip the Parmesan Wafer Crisps:
Using a fish slice, slowly lift the edges of the wafer.
When it starts to move as one, lift up the whole sheet and flip it over.
Cook it for 1 - 2 minutes more and then remove it from the heat and flavour it as you wish.

4. Use the Parmesan Wafer Crisps:
Allow to cool and then break it in to wafers, any size at all to use for whatever you want.

Store the Wafers:
Add the wafers in to a sealed container and then store them in a cool cupboard or fridge.
They will keep well for around 10 days like this.
