Parmesan Wafer Crisps

Parmesan Wafer Crisps are made with one ingredient but they create such a dramatic flair to any savoury dish. A fine grater and a frying pan is all you need to make them. Add them on top of Savoury Muffins or sprinkle them over your favourite soup for the crunch factor.

Parmesan Wafer Crisps are the easiest but most effective whakarākei mōkararkara (savoury decoration). I am a complete sucker for beautiful decorations and especially wafers, shards or rustic shapes. The best part, these only take five minutes to make. Regardless of you use these them, they will always impress.

How to make Parmesan Wafer Crisps:

They couldn’t be easier! Preheat a frying pan over medium heat. Finely grate over the parmesan cheese in an even layer directly on to the heated pan. In just a few moment the tīhi (cheese) begins to set in a beautiful web. Cook for two or three minutes. Using a fish slice, slowly lift the edges of the wafer. Once it starts to move as one, lift up the whole sheet and flip it over. Cook it for a few minutes or so more and pull it off as one big sheet. Now break them in to delicate wafers that finish off any savoury treat or store them in a sealed container to use later.

Mawhene Mōkarakara (Savoury Muffins):

My Cheesy Bacon Savoury Muffins recipe has been swirling around in my brain for a couple of years. It is now free in the world to be used by you! It started as an image in my mind as many recipes do. I imagined a mawhene mōkarakara (savoury muffin) with a kirīmi tīhi (cream cheese) and amiami (herb) topping piled in the centre. Additionally, perched on top were these rustic parmesan wafers that stood proudly in the air. It was so clear in my mind and as you can see in the whakaahua (photo’s), the dream became a reality. I encourage you e te whānau (family) to give these Cheesy Bacon Savoury Muffins a go, they are delicious warm from the oven. Or if you feel like a baking adventure then enjoy them with the herby topping and these dramatic pōtae (hats)!

Parmesan Wafers

The simplest cheese decoration you can ever make – one ingredient, a fine grater and a frying pan is all you need to make these super fun parmesan wafers!

Ingredients

  • 50 g Parmesan cheese

Instructions

  • Simple heat a frying pan over medium heat.
  • Once it is heated, finely grate over the parmesan cheese in an even layer. Cook for two or three minutes.
    Using a fish slice, slowly lift the edges of the wafer. Once it starts to move as one, lift up the whole sheet and flip it over.
  • Cook it for 1 – 2 minutes more and then remove from the heat. Allow to cool and then break it in to wafers for whatever you want.
    They are so cute, I can't wait to see what you do with them.
