Chia Raspberry and Lemon Jam – Tiamu Rahipere Chia

Whip up this Chia Raspberry and Lemon Jam (tiamu rahipere chia) in just 10 minutes. Jam making can be a bit daunting and many have experienced burning the jam pot. No judgements here because I have been there and learnt from that! However, this tiamu (jam) is different from most because it doesn’t rely on heaps of huka (sugar) and pectin from the hua (berries) to thicken it. Instead, we use a secret ingredient that absorbs the liquid of the tiamu (jam). What is the secret? Our tiny little friends, the chia seeds. Once the kākano (seeds) hit the heat of the hot hua (berries) in the pan, they begin to thicken the jam. Thus the huka (sugar) is reduced and the time is cut down. How good is that? E mihi ana ki ēnei hoa iti (a big thank you to these little friends), the humble but mighty chia seeds.

What is the process?

Add rahipere tio (frozen raspberries), huka one (caster sugar) and wai rēmana (lemon juice) in to a pan. Dissolve the huka (sugar) and bring it to a simmer, add the chia seeds and stir them through. The liquid will start to absorb in to the chia seeds and after ten minutes, it is thick and ready! It is so fresh and delicious and also makes the most epic filling for my Louise Slice. So come on, if you have twenty minutes, you have time to make this tiamu – jam!

Last year I made a delicious cake that starts with a citrus spiked Victorian sponge. The cakes are layered with tiakarete mā (white chocolate) and this tiamu (jam). Ingredients

Chia Raspberry Jam – Tiamu Rahipere Chia

  • 2 ½ C (300g) rahipere tio (frozen raspberries)
  • ½ C (110 g) huka one (caster sugar)
  • ¼ C (65 ml) wai rēmana (lemon juice)
  • 2 tbsp kākano chia (chia seeds)

Instructions

Chia Raspberry Jam – Tiamu Rahipere Chia

  • Add the rahipere tio (raspberry jam), huka one (caster sugar) and wai rēmana (lemon juice) to a large frying pan or pot. Boil over medium heat, stirring occasionally for 5 minutes or until the sugar is dissolved.
  • Turn the heat to low and add in the kākano chia (chia seeds). Stir until they are well mixed in, cook on low for 2 minutes as you continue to stir.
  • Leave the pot on the hot element but turn the heat completely off. Leave the kākano chia (chia seeds) to do their thing. Stir every few minutes.
  • After 10 minutes or so the jam will have thickened to perfection. Have it warm with ice cream or bottle it up in a recycled jar and give it to someone that needs some aroha (love).
